Appearance
Clear, crystalline yellow.
Terroir
Altitude between 120-140m. Well-drained clay-limestone soil. The predominance of the Mistral (North wind) provides good aeration and natural protection against disease.
Viticulture & Vinification
Our organic viticulture seeks to be in harmony with the earth, with organic fertilisation and minimal use of sprays. The vines have trellising and are pruned using Cordon de Royat.
The grapes are hand-picked and the grape must is fermented at low temperatures to extract the natural flavours of the grapes.
We harvested the Vermentino in early September for its fresh aromas. The Grenache blanc and then the Clairette were harvested later in September for full ripeness. 30% was aged in French oak for 6 months.
Palate
Organoleptic description
Green buds of blackcurrant, yellow flowers eg acacia, mirabelle (yellow) plums on the noise.
Fresh, salty wine with good body and roundness on the palate. Long finish.
Serving suggestions
Ideal as an aperitif, with Serrano ham or creamy cheeses and white meats in sauce. Pairs perfectly with delicately spiced Asian dishes.

70% Grenache Blanc, 15% Clairette and 15% Vermentino.
